Eone 7 oz. pkg. macaroni and cheese1 lb. ground beef1/2 cup chopped celery1/4 cup chopped green bell pepper2 T. chopped onionone 11 oz. can mexican corn, drainedone 6 oz. can tomato paste3/4 cup water1 tsp. salt1/8 tsp. black pepperone 2 3/4 oz. pkg. potato chips, crushedPreheat oven to 350. Grease a 1 1/2 qt. baking dish. Prepare macaroni and cheese using pkg. directions. Combine ground beef, celery, bell pepper, onion in a large skillet. Cook over medium-high heat, stirring frequently, until ground beef is browned, crumbly, vegetables are tender, about 8 minutes; drain well. Add mexican corn, tomato paste, water, salt, black pepper to ground beef mixture, mix well. Stir in macaroni and cheese. Spread into prepared baking dish. Sprinkle with crushed potato chips. Bake until hot, bubbly, about 15-20 minutes.

Prepare macaroni and cheese as directed, I usually omit the butter. In another skillet brown turkey. When turkey is browned, stir into mac and cheese. Add salsa and corn. Heat and serve. Makes 4 servings.

Preheat oven to 375. Prepare Kraft Macaroni & Cheese Dinner
according to package. Brown meat with garlic & oregano in large
nonstick skillet; drain. Add tomatoes with their liquid and the thawed
& drained beans; mix well.
Spoon meat mixture into 13X9 inch baking dish; top evenly with prepared
macaroni. Cover with foil.
Bake 30 min or until heated through. Remove from oven; uncover.
Sprinkle with cheese. Let stand 5 min or until cheese is melted.

Pineapple Pork Chops
6 Pork Chops (I used bone in)
salt & pepper
8oz pineapple juice
2 T brown sugar
1/2 t rosemary
1/4 t garlic powder
Coat skillet with cooking spray and heat pan over high heat. Season pork chops with salt and pepper, brown each side for 1 minute. Reduce heat to med-high and continue cooking (each side for 4 minutes). Remove pork chops from pan. Add the pineapple juice, brown sugar, rosemary, & garlic powder. Bring to boil, stirring to remove anything stuck to the bottom the pan. Simmer approx 5 minutes. Return pork chop to pan, coat with the sauce.

16 oz. dry spaghetti, cooked
1 lb. Velveeta Light cheese
12.5 oz. can chicken breast, drained and flaked
10 3/4 oz. can 98% fat free cream of mushroom soup, undiluted
10 3/4 oz. can 98% fat free cream of chicken soup, undiluted
10 oz. can diced tomatoes and green chilies (Rotel)
4 oz. can mushroom stems and pieces, drained
1/2 cup water
1 small onion, diced
1 medium green pepper, diced
salt & pepper, to taste
Instructions
Spray slow cooker with non-stick cooking spray.
Combine all ingredients in slow cooker and stir to mix well.
Cook on LOW for 2-3 hours. Stir again just before serving.

8 oz Velveeta Light, grated 2 Tbls taco seasoning ( I used taco bell brand)
1 can fat free cream of chicken soup
1 can of Rotel tomatoes (original flavor)
1/2 bag of baked Doritos, Nacho cheese flavor, crushed
Brown ground beef, then add taco seasoning, cream of chicken soup, & rotel tomatoes. Stir to combine. In a casserole dish sprayed with Pam put down 1/2 of the crushed doritos, then half the meat mixture and then half of the grated cheese, repeat layers one time finishing off with cheese. Bake in preheated 350 oven for 30 mins until hot and bubbly.

1 lb small potatoes (6 to 8), unpeeled, cut into 1-inch pieces (3 cups)
2 cups ready-to-eat baby-cut carrots
1 cup frozen small whole onions (from 1-lb bag), thawed
6 boneless skinless chicken thighs (1 1/4 lb)
1/2 teaspoon salt
1/8 teaspoon pepper
1 jar (12 oz) chicken gravy
1 1/2 cups Green Giant® Valley Fresh Steamers™ frozen sweet peas, thawed
1.Spray 3- to 4-quart slow cooker with cooking spray. In cooker, place potatoes, carrots and thawed onions. Sprinkle chicken with salt and pepper; place over vegetables in cooker. Pour gravy over top.
2.Cover; cook on Low heat setting 8 to 10 hours.
3.Stir in thawed peas. Increase heat setting to High. Cover; cook about 15 minutes longer or until peas are tender.

¼ c. diet lemon lime soda
1 TB low sodium soy sauce
½ tsp black pepper
Place frozen chicken in 2 quart slow cooker. Combine brown sugar, vinegar, soda, soy sauce and black pepper. Pour over chicken. Cook on high 4 to 6 hours.

Crockpot Chicken and Noodles
3 boneless skinless chicken breast
2 cans of Health Request low fat Cream of Chicken Soup
water
salt and pepper
3/4 of a bag of whole wheat noodles (cooked per directions on bag)
Put raw chicken breast in the crock pot. Add both cans for soup and then add water just to cover the chicken. Salt and pepper. Cook on low for 5-6 hours. When done use a knife and fork and shred up the chicken breast. Boil noodles per the directions and add to crockpot. Mix well.

1 can (12 fl. oz.) NESTLÉ® CARNATION® Evaporated Milk

2 tablespoons all-purpose flour
1 teaspoon dried basil leaves

PREHEAT oven to 350° F. SPRINKLE 1 cup cheese and half of pepperoni pieces onto bottom of pie shell. WHISK evaporated milk, eggs, flour, basil and garlic powder in medium bowl until blended. Mix together all hambuter ingredients. Divide mixture evenly and form into 8 patties, size according to plan.
Heat grill over medium-high flame. Cook burgers until desired doneness. Midway through cooking baste with sauce and cook another 2-3 minutes.

1 lb ground turkey (99% fat free)
1/3 cup seasoned bread crumbs
4 tbsp chunky salsa (use medium or hot for extra kick)
DIRECTIONS
Combine all ingredients until well mixed.
Add salt and pepper to taste.
Divide into 4 patties.
Spray a frying pan with cooking spray and cook over medium heat until cooked thoroughly (about 10 minutes), flipping once about half-way through.

1 (10-ounce) can refrigerated pizza crust
Cooking spray
1/4 cup (1 ounce) shredded part-skim mozzarella cheese
1/4 cup (1 ounce) shredded reduced-fat sharp cheddar cheese
1 1/2 cups bottled fat-free Italian herb pasta sauce (such as Muir Glen)
Preheat oven to 425°.
Combine first 4 ingredients; beat with a mixer at medium speed 2 minutes or until well-blended. Stir in spinach, bell peppers, garlic powder, and black pepper.
Unroll pizza crust onto a baking sheet coated with cooking spray; pat into a 14 x 10-inch rectangle. Spread spinach mixture over half of the crust, leaving a 1-inch border. Sprinkle mozzarella and cheddar over spinach mixture. Fold dough over filling; press edges together to seal.
Bake at 425° for 15 minutes or until browned. Cool on a wire rack 5 minutes. Heat pasta sauce in a small saucepan over medium heat. Cut calzone into 6 squares, and top with sauce.

3/4 teaspoon ground cumin
1/2 teaspoon chili powder
2 garlic cloves, minced
1/2 cup fat-free fire-roasted salsa verde
1 (11-ounce) can refrigerated thin-crust pizza dough
3/4 cup (3 ounces) preshredded Mexican blend cheese
Cooking spray
1/4 cup fat-free sour cream
Preparation
1. Preheat oven to 425°.
2. Heat a large nonstick skillet over medium-high heat. Add ground turkey to pan; cook 3 minutes, stirring to crumble. Add onion and next 5 ingredients (through garlic) to pan; cook 4 minutes or until vegetables are crisp-tender, stirring mixture occasionally. Remove turkey mixture from heat; stir in salsa.
3. Unroll dough; divide into 4 equal portions. Roll each portion into a 6 x 4–inch rectangle. Working with one rectangle at a time, spoon about 1/2 cup turkey mixture on one side of dough. Top with 3 tablespoons cheese; fold dough over turkey mixture, and press edges together with a fork to seal. Place on a baking sheet coated with cooking spray. Repeat procedure with remaining dough and turkey mixture. Bake at 425° for 12 minutes or until browned. Serve with sour cream.
Black bean salad: Combine 1 (15-ounce) can rinsed and drained black beans, 1 cup quartered cherry tomatoes, 1/2 cup chopped red onion, 1/4 cup chopped celery, 2 tablespoons fresh lime juice, 2 tablespoons chopped fresh cilantro, and 1 tablespoon olive oil in a medium bowl; toss well to coat.

Broccoli-Sausage Calzones
2/3 cup chopped broccoli florets
2/3 cup (about 3 1/2 ounces) diced chicken and sun-dried tomato sausage (such as Gerhard's)
1/2 cup part-skim ricotta cheese
1/4 cup (1 ounce) shredded sharp provolone cheese
1/4 teaspoon freshly ground black pepper
1 (10-ounce) can refrigerated pizza crust dough
Olive oil-flavored cooking spray
Preheat oven to 350°.
Steam broccoli, covered, 3 minutes or until tender.
Combine broccoli, sausage, ricotta, provolone, and black pepper in a bowl. Divide pizza dough into 4 equal portions on a lightly floured surface; cover and let rest for 10 minutes. Shape each piece into a ball. Roll each ball into a 6-inch circle. Place about 1/3 cup sausage mixture on half of each circle, leaving a 1/2-inch border. Fold the pizza dough over the sausage mixture until the edges almost meet. Bring the bottom edge over the top edge; crimp edges of dough with fingers to form a rim.
Place the calzones on a baking sheet coated with cooking spray. Pierce tops with a fork. Lightly spray the tops with cooking spray. Bake at 350° for 35 minutes or until golden brown.

Ingredients
1/4 cup fat-free, less-sodium chicken broth
5 teaspoons butter, melted
1 large garlic clove, minced
1/2 cup dry breadcrumbs
1 tablespoon grated fresh Parmigiano-Reggiano cheese
1 teaspoon paprika
4 (6-ounce) skinless, boneless chicken breast halves
1/4 teaspoon salt
1/4 teaspoon dried oregano
1/4 teaspoon freshly ground black pepper
4 thin slices prosciutto (about 2 ounces)
1/4 cup (1 ounce) shredded part-skim mozzarella cheese

Preparation
Preheat oven to 350°.
Place broth in a small microwave-safe bowl; microwave at high 15 seconds or until warm. Stir in butter and garlic. Combine breadcrumbs, Parmigiano-Reggiano, and paprika in a medium shallow bowl; set aside.
Place each chicken breast half between 2 sheets of heavy-duty plastic wrap, and pound each to 1/4-inch thickness using a meat mallet or rolling pin. Sprinkle both sides of chicken with salt, oregano, and pepper. Top each breast half with 1 slice of prosciutto and 1 tablespoon mozzarella. Roll up each breast half jelly-roll fashion. Dip each roll in chicken broth mixture; dredge in breadcrumb mixture. Place rolls, seam side down, in an 8-inch square baking dish coated with cooking spray. Pour remaining broth mixture over chicken. Bake at 350° for 28 minutes or until juices run clear and tops are golden.

2 c water
3 c strawberries, slices
1 small box SF Strawberry Jello
...garnish dessert w/ FF Cool Whip
Bring water and pudding to a boil. Remove from heat and immediately add the strawberry Jello.
Stirring until dissolved. Set aside and cool to room temperature. Place sliced strawberries on the
bottom and up the sides of a deep dish pie plate. Pour cooled pudding/Jello mixture slowly over

7 Hebrew National 97% Fat Free Beef Franks (or another brand of nearly fat-free hot dogs with 40 - 45 calories each)
1 cup canned cream-style corn
2/3 cup all-purpose flour
1/2 cup yellow cornmeal
1/2 cup fat-free liquid egg substitute (like Egg Beaters Original)
1/2 cup fat-free sour cream
2 1/2 tbsp. Splenda No Calorie Sweetener (granulated)
2 1/2 tbsp. granulated sugar
1 1/2 tsp. baking powder
1/4 tsp. salt
Directions:
Preheat oven to 375 degrees.
Combine flour, cornmeal, Splenda, sugar, baking powder, and salt in a large bowl. Mix well and set aside. In a separate small bowl, mix together corn, egg substitute, and sour cream. Stir thoroughly. Add contents of the small bowl to the large one, and stir until completely mixed.
Cut 2 hot dogs in half, leaving you with 4 cocktail-sized franks. Cut each of the halves into 6 pieces, leaving you with 24 "coins." Set aside. (You'll use these to top the muffins.)
Chop the remaining hot dogs into very small pieces. Add those to the large bowl, and stir until they are integrated into the batter.

8 wonton wrappers
8 ounces mozzarella cheese, grated
3 ounces parmesan cheese, grated

8 cherry tomatoes, for garnish
8 small basil leaves, for garnish
Preheat oven to 375 degrees F.
2 To start the lasagnas: Cook hamburger meat, season to taste, drain.
3 Reserve 8 tablespoons of Parmesan and 8 tablespoons of mozzarella?this will be the topping. The remaining cheese will be used in the lasagnas (note you can vary the amount of cheese to taste keeping in mind that the parmesan is salty, the mozzarella is sweet as well as salty and helps to hold the lasagnas together, and the ricotta is sweet and creamy).
4 Start assembling the lasagnas. Line each cupcake mold with a round wonton wrapper. Put a little Parmesan, a little mozzarella, and a little ricotta into each mold. Top with a little meat and a spoonful of sauce. Repeat layers of wonton wrappers, cheeses, meat and sauce, creating 6 layers in all, and ending with sauce. Sprinkle each lasagna with reserved Parmesan and mozzarella.
5 Bake until the lasagnas are nicely browned, about 20 minutes. Serve warm garnished with cherry tomatoes and basil leaves.

About 1 cup (1/2 lb.) butter or margarine at room temperature
1 cup sugar
1 large egg, separated
3 tablespoons almond-flavored liqueur, such as amaretto, or 1 tablespon almond extract

About 2 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 1/4 cups sliced almonds
1. In a large bowl, with a mixer on medium speed, beat 1 cup butter and sugar until smooth. Add egg yolk, liqueur, and orange peel and beat until well blended.
2. In another bowl, mix 2 cups flour, baking powder, and salt. Add to butter mixture; stir to mix, then beat until well blended. Gather dough into a ball, divide in half, and flatten each portion into a disk; wrap each tightly in plastic wrap and freeze until firm enough to roll without sticking, about 30 minutes.
3. Unwrap dough. On a lightly floured surface, with a floured rolling pin, roll one disk at a time to about 1/4 inch thick. With a floured, 2-inch round cutter, cut out cookies. Place about 2 inches apart on buttered 12- by 15-inch baking sheets. Gather excess dough into a ball, reroll, and cut out remaining cookies.
4.In a small bowl, beat egg white with 1 teaspoon water to blend. Brush cookies with mixture and sprinkle or arrange about 1/2 teaspoon sliced almonds on each.

1. Position a rack in the center of the oven and preheat to 350 degrees F. Lightly spray two nonstick baking sheets (preferably insulated) with oil.
2. In a medium bowl, whisk the flour, baking soda and salt until well combined. Set aside.
3. In a medium bowl, using a handheld electric mixer set at high speed, scraping down the sides of the bowl often with a rubber spatula to force the mixture into the blades, beat the brown sugar, granulated sugar and butter until the mixture resembles coarse bread crumbs, about 1-1/2 minutes.
4. In a small bowl, beat the egg, oil, corn syrup and vanilla. Pour into the butter / sugar mixture and beat until combined. Add the dry ingredients and the chocolate chips. Using a spoon, stir just until a stiff dough forms.
5. Using a heaping teaspoon for each, roll the dough into 1-inch balls. Place them 2 inches apart on the prepared sheets (the cookies will spread during baking).

3 Cake topping: In a large bowl, beat butter with sugar until light and fluffy.

5 In separate bowl, whisk together flour, baking powder and salt.

2 green bell pepper, seeded and cubed

• 4 oz 50% reduced fat sharp cheddar
• butter flavored cooking spray
• 2 tbsp parmesan cheese
• 2 tbsp whole wheat seasoned breadcrumbs
Cook noodles in salted water until al dente, or slightly undercooked by 2 minutes. Set aside.
Melt the butter in a large deep skillet. Add onions and cook on medium heat until soft, about 5 minutes. Add the flour and a pinch of salt and stir well, cooking an additional 2-3 minutes on medium-low heat
Preheat oven to 375°. Lightly spray 9 x 12 casserole with butter flavored cooking spray.
Slowly whisk in the chicken broth until well combined, increasing heat to medium and whisking well for 30 seconds, then add the milk and bring to a boil. When boiling, add sherry, mushrooms and petite peas, adjust salt and pepper to taste and simmer on medium, mixing occasionally until it thickens (about 6-7 minutes). Add drained tuna, stirring another minute.

For Muffins:

Brown ground beef, drain. Mix in a can of enchilada sauce and a small can of tomato sauce. Then add a small can of sliced black olives. Cut up the refrigerated biscuits and stir them in. Then you just dump it all in a greased casserole and bake until the biscuits are brown. Bake for 25 minutes. Sprinkle with cheese, and bake an additional 10 minutes or until biscuits are done. Let stand 5 minutes before serving.

3 Laughing Cow Light Queso Fresco & Chipotle Wedges
3 oz cooked 95% lean ground beef -(I browned mine with McCormick Hamburger Seasoning)
2-3 Grape Tomatoes, chopped
1 Scallion, finely chopped (green part only)
1 T Ketchup
1 T Yellow Mustard
¾ c reduced fat 2% shredded cheddar cheese
Directions:
1. Preheat the oven to 450.
2. Spread Laughing Cow wedges evenly across the top surface of the pizza crust, leaving at least a ½ inch edge around the outside. Sprinkle the ground beef evenly over the top and repeat with scallions and tomato pieces. Squirt ketchup in a thin stream back and forth about 4 times (8 lengths total) over the width of the pizza. Repeat with mustard going the other direction, crisscrossing the ketchup (I went back and forth 2 extra times to cover the same area because the stream is thinner than ketchup). Finish the pizza by sprinkling the cheddar cheese over top.
3. Place pizza on a foil covered baking sheet, a pizza stone (my preference) or straight onto the oven rack (depending on how you like your crust) and bake for 8-10 minutes.

Parchment paper

1. Preheat oven to 450°. Cook ground round and sausage in a large skillet over medium-high heat, stirring often, 8 to 10 minutes or until meat crumbles and is no longer pink. Drain beef mixture, reserving 1 tsp. drippings in skillet. Reduce heat to medium.
2. Sauté onion in hot drippings 2 minutes. Add garlic, and cook 1 minute or until tender. Add mushrooms, and sauté 8 to 10 minutes or until most of liquid has evaporated. Stir in beef mixture, pasta sauce, Italian seasoning, and salt. Bring to a light boil, and simmer 5 minutes.
Meanwhile, unroll dough on a lightly floured piece of parchment paper. Invert 1 (9-inch) round baking dish or pie plate onto center of dough. Cut dough around edge of baking dish, making a 9-inch circle. Remove excess dough around baking dish; cover and chill, reserving for another use, such as Cinnamon Nuggets. Remove baking dish.
4. Pour beef mixture into baking dish, and sprinkle with cheese. Immediately top with dough circle. Cut an "X" in top of dough for steam to escape. Place baking dish on an aluminum foil-lined baking sheet.
5. Bake at 450° for 16 to 20 minutes or until crust is golden brown. Let stand 10 minutes before serving.

1. Preheat oven to 350 degrees. Spray a 9x5 inch loaf pan with olive oil flavored cooking spray.
2. In a medium bowl, combine potato flakes, water, sour cream and parsley flakes. Mix well and set aside.
3. In a large bowl, combine onion, green pepper, bread crumbs, chili seasoning and 1/3 cup tomato sauce. Add meat. Mix well to combine.
4. Pat half of mixture into prepared loaf pan. Spread potato mixture evenly over top. Pat remaining meat mixture over potato mixture.

Heat oil in a 12-inch cast-iron skillet over medium-high heat. Add onion; sauté 10 minutes or until tender. Spoon onion into a bowl; let cool.

Oven Fried Panko Chicken
5 boneless chicken breasts, washed & patted dry
1/4 c. butter, melted
2 cloves garlic, minced
1/4 c. Dijon mustard
1/2 c. panko (Japanese bread crumbs)
3 tbsp. Parmesan cheese, shredded
1 tbsp. parsley flakes
Mix melted butter/butter, garlic and mustard. Set aside. Mix panko crumbs, Parmesan cheese, and parsley. Set aside.
Coat chicken in mustard sauce on both sides; dip chicken tops only in crumb mixture to coat.
Lay chicken in baking pan, crumb mixture side up (use small baking pan so that chicken is cozy, close together).
Bake at 500 degrees for 15 minutes. Check for doneness. Juices should be clear when pricked with a fork. If they are not done and getting too brown, turn oven down to 400 degrees and check again in 5 minutes.

1-1/2 lb whole uncooked red potato

1/3 c. fat-free sour cream

7 Hebrew National 97% fat free beef franks, sliced into coin size slices
3/4 oz. Kraft 2% Milk Cheddar cheese, finely shredded
fresh ground pepper to taste
Cut potatoes into 1/2 - 3/4 inch cubes, and cook until almost done. Set aside.
In a large bowl mix cheddar cheese soup, sour cream, 1/2 c. cheese and hot dogs.
Add cubed potatoes and mix well.
Put mixture into 9x13" casserole dish that has been sprayed with non-fat cooking spray. Grind pepper, to taste, on top.
Sprinkle 3/4 oz. cheddar cheese lightly on top and spray the top of the casserole with butter flavored cooking spray.
Bake at 375 degrees for about 30-40 min until top starts to brown and casserole is bubbling.

1/2 cup shredded Parmesan cheese, strong-flavored like Romano or Parmigiano Reggiano
Heat a large nonstick skillet over medium-high heat. Add beef, onion and garlic, and cook, stirring frequently and breaking up meat with a wooden spoon as it cooks, about 5 to 7 minutes. Stir in crushed tomatoes, tomato sauce, salt, oregano, basil and crushed red pepper flakes; simmer 5 minutes to allow flavors to blend.
Meanwhile, in a medium bowl, stir together ricotta cheese and 1 cup of mozzarella cheese.
Spoon 1/3 of beef mixture into a 5-quart slow cooker. Break 3 lasagna sheets in half and arrange over beef mixture; top with half of ricotta mixture. Repeat with another layer and finish with remaining 1/3 of beef mixture.

3 tablespoons bread crumbs, seasoned
1 tablespoon freshly grated Parmesan cheese
1 teaspoon salt
1/8 teaspoon pepper

1 small onion -- chopped
1 clove garlic -- minced
Cut tenderloin crosswise into 8 slices, approximately 1-inch thick. Place each slice on its cut surface and flatten with heel of hand to 1/2-inch thickness.
Combine crumbs, Parmesan cheese, salt and pepper; dredge pork slices to coat.
Saute slowly, with onion and garlic, in oil in large skillet for 10 minutes.

1 cup canned 98% fat-free cream of mushroom condensed soup
1 cup fat-free sour cream

2 cups frozen bite-sized mixed vegetables
1 cup canned sliced mushrooms, drained

Preparation
Preheat oven to 375 degrees.
In a large bowl, mix condensed soup, sour cream, garlic, and salt. Add cauliflower, mixed veggies, and mushrooms, and stir to coat. Set aside.
Lay a large piece of heavy-duty foil on a baking sheet and spray with nonstick spray. Season chicken with salt, black pepper, and any additional spices you like. Place chicken in center of the foil, and top with veggie mixture.
Place another large piece of foil on top. Fold together and seal all four edges of the two foil pieces, forming a well-sealed packet.
Place baking sheet in the oven and bake for about 1 hour, until chicken is cooked through.

1. Preheat oven to 400 degrees. Cook ground beef, steak seasoning and Worcestershire until browned. Drain. Return to skillet and add Velveeta. Cook until melted. Remove from heat and set aside. 1/2 onion, chopped
2 stalks celery, chopped
1 small can sliced mushrooms, drained
3 - 10 oz boxes chopped broccoli
1 box laughing cow garlic cheese (8 wedges)
1/2 cup 2% cheddar cheese
1 can red. fat cream of mushroom soup
panko bread crumbs
Sauté onion, celery and mushrooms in butter. Following package directions, cook broccoli until thawed and just barely done. Do not overcook. Add to sautéed vegetables and place in sprayed 2 quart casserole dish. Melt cheese with soup over low heat, then pour over broccoli mixture. Top with panko, sprayed with pam and place in 350 degree oven for 30 minutes, or until mixture is bubbly and panko is browned.

Bowtie Chicken and Broccoli Alfredo
Crissy's Note: I use fresh garlic rather than powder and also add a sprinkle of crushed red pepper for a little kick.
8 ounces bowtie pasta -- (3 cups dry)
5 cups broccoli florets
1 cup low-fat milk
1 1/2 tablespoons cornstarch
1 cup reduced-sodium chicken broth
1/4 cup light cream cheese
1/2 teaspoon garlic powder
1/4 teaspoon pepper -- or more to taste
1/2 cup grated Parmesan cheese
2 cups shredded cooked boneless, skinless chicken breast
Cook the pasta according to the package directions while preparing the sauce, and set aside.
Place the broccoli in a large microwave safe dish. Add 3 tablespoons of water, cover, and microwave for 4 minutes, or until crisp tender.
In a medium saucepan, whisk the milk and cornstarch until smooth. Whisk in the broth and place over low heat. Add the cream cheese, garlic powder, and pepper. Bring to a low simmer and cook until the sauce thickens, about 4 minutes. Whisk in the Parmesan and cook for 1 to 2 more minutes, or until sauce is smooth.
Toss the cooked pasta, broccoli, and chicken together in a large serving dish. Pour the sauce on top, and toss gently to combine.

Ingredients:
1 pound ground beef or turkey
8-12 ounces medium pasta shells or other small dry pasta shapes
1 small onion, chopped (about 1 cup)
1 clove garlic, minced
1 (14 oz.) can diced tomatoes with mild green chilies
1 packet (4 tablespoons) taco seasoning
3 ounces cream cheese
1/2 cup sour cream
1/4 cup chopped cilantro
Salt and pepper
Instructions:
Bring a large pot of water to boil. Cook pasta according to the package directions. Drain, reserving 1/2 cup of pasta water. Set aside.
Meanwhile, in a large skillet or sauté pan, cook the ground meat over medium-high heat until no longer pink. A few minutes before the meat is cooked through, add the chopped onion to the skillet. Once the meat is cooked through, mix in the garlic and cook until fragrant, about 30 seconds. Add in the diced tomatoes and taco seasoning and let simmer over medium heat for about 3-5 minutes.
Stir in the cooked pasta, cream cheese, sour cream and reserved pasta water, and continue stirring until the cream cheese is melted and the sauce is well blended. Season with salt and pepper to taste. Simmer over medium-low heat 3-5 minutes to reduce the sauce a bit if it is still too thin.

3 cups frozen hash brown potatoes

1/4 teaspoon Garlic Powder
7 (4 oz.) Boneless Skinless Chicken Breast Halves
Place chicken in a crock pot sprayed with non-stick cooking spray. Mix soups and garlic powder. Pour over chicken. Cover and cook on low for 6-8 hours. This is good served with a baked potato. I like to put some of the sauce on my potato.

Chocolate Raspberry Smoothie
Ingredients
1 1/2 cups raspberries
1 1/4 cups fat-free (skim) milk
1 1/3 cups Yoplait® Light Red Raspberry yogurt (from two 6-ounce containers)
1/2 cup fat-free chocolate-flavor syrup
Directions
1. Place all ingredients in blender. Cover and blend on high speed about 30 seconds or until smooth. Serve immediately.
